BBQ PORK RECIPE
Ingredients: 4 pound pork roast, 2 onions chopped, 1 large bottle of ketchup, 2 tablespoons worcestershire sauce, ½ cup brown sugar, 1 teaspoon dry mustard, 1 teaspoon tabasco sauce.
Directions: Using a small amount of oil in a dutch oven, saute onions. Add other ingredients except the pork and cook for 10 minutes. Add the pork and put on the lid. For camp Dutch oven cooking, use a 12 or 14 inch dutch oven. Put 10 to 12 coals on the bottom and 14 to 16 on the top. Cook for 2 hours or until temperature of meat reaches 160 degrees.
OVEN BAKED WHOLE CHICKEN
Ingredients: 3 to 4 pound chicken, salt and pepper or seasoning salt.
Directions: Put oil in the bottom of a 12 or 14 inch dutch oven and brown the chicken on all sides - season as you turn it. Put on the lid. Using 10 or 12 coals on the bottom and 12 to 14 on the top, cook for 30 minutes. Check to see if there is juice in the bottom - if not, add some water. Continue cooking for another 45 to 60 minutes.

Slow cooker and crock pot recipes can be easily adapted for cooking in a dutch oven.
For a 12 inch oven use the following guideline - low on a slow cooker, use 12 to 14 coals; medium on a slow cooker, use 16 to 18 coals; high on a slow cooker, use 18 to 20 coals. Instead of cooking for 8 hours like your slow cooker recipes use, only cook for about 2 hours in a dutch oven.
It’s important to brown meat first when cooking in a dutch oven so it has a nice appearance. Check after about 30 minutes to be sure there are juices in the bottom of the pan - if not, add some water.
It is best to use charcoal briquettes - they give more even heat and last longer than coals from a campfire.
Try these easy camping recipes in your crockpot or dutch oven:
Brown 1 pound of hamburger in a 12 inch dutch oven using about 18 coals. Add 1 onion diced, 1 green bell pepper diced, and saute until tender. Add 1 can diced tomatoes, 2 cans tomato soup, 2 soup cans water, 2 teaspoons paprika and 2 teaspoons salt.
Bring to a boil and add 12 ounces of pasta. Put the lid on the dutch oven and cook with 10 coals on the bottom and 14 on the top for 30 minutes.
Ingredients: 2 pounds hamburger or ground round, 2 eggs, 2 slices of white bread cubed, milk, ketchup, 1 onion chopped, salt and pepper.
Beat eggs and add bread cubes. Add enough milk to moisten the bread cubes. Mix in hamburger, onions, salt and pepper to taste. Place in slow cooker and shape. Pour ketchup over all the top and cook on low for 8 hours. To cook in a 12 inch dutch oven - use 6 coals on the bottom and 8 on the top. Cook for 2 hours, replacing coals if needed.

GRILLED FLANK STEAK
Marinade: 1/4 cup honey, 1/4 cup soy sauce, 1/3 cup olive oil, 2 cloves garlic minced, 2 tablespoons balsamic vinegar.
Combine and put in a ziplock bag. Add 2 pounds flank steak. Seal tightly and lay in a dish. Chill and marinate for 2 hours.
Preheat grill to high heat. Grill steak 4 to 5 minutes on each side. Remove from heat and cover with foil. Let rest for 10 minutes, then slice thinly.
GRILLED GARLIC SHRIMP
Ingredients: 2 pounds of raw shrimp peeled with tails left on, 1 clove garlic crushed, 1/3 cup olive oil, juice of 1 lemon.
Directions: Combine garlic, olive oil and lemon. Add shrimp and stir to coat well. Chill and marinate for 2 hours. Put shrimp on skewers and grill for 5 to 6 minutes, turning often.

Campfire cooking recipes are my favorite. I love cooking over an open fire or cooking on coals. The wood smoke gives such a wonderful flavor to everything.
You have to adjust your campfire to what kind of cooking you will be doing. To cook over flames, you have to have a small fire and keep adding small pieces of wood so it stays burning. If you use coals, you have to build a larger fire for about an hour to get sufficient coals for cooking.
Here are some easy camping recipes that are good for outdoor campfire cooking:
Cut foil to twice the size of a chicken piece and lay a piece of chicken on it so the middle of the foil is against the end of the chicken piece. Salt and pepper the chicken and put 2 tablespoons of teriyaki sauce on it.
Fold over the top of the foil so the ends meet. Make a 1/2 inch fold with the 2 end pieces, flattening it tight. Keep folding in this manner until the foil package is tight. Do the same with both sides.
Rake out coals from the campfire and put the foil packets on them. Cook for 1 hour, turning every 15 minutes. Be sure there are no flames in the coals or you will have burned food.
HAM AND BEANS
Soak your beans overnight or for several hours in a large pot that can be put on the campfire - I have dutch ovens that I use only on the campfire because the outside gets black with soot.
When you are ready to start cooking, put 2 cut up onions, 1 cup celery, 1 cup carrots, salt and pepper and a ham bone in a 12 or 14 inch Dutch oven. Add enough water to be about 2 inches above the beans. As the beans are cooking, monitor for enough water so they don’t burn.
After the beans have simmered for about 2 hours, taste a bean to see if you have added enough salt. If your ham bone doesn’t have enough meat on it, add some more ham chunks. Keep adding small amounts of wood to keep the beans simmering until they are done.

Cast iron recipes can be used in any of the three ways of cooking food - they can be used on a camp stove, with charcoal, or on the campfire. Cast iron cookware is my preference because heat is distributed evenly and it does a super job, no matter what you are cooking. Plus, they last forever. Cast iron can cook any of your easy camping recipes and do a good job of it.
CHICKEN FRIED STEAK
Ingredients: tenderized round steak, eggs, milk, flour, cracker crumbs, salt, pepper, seasoning salt, cajun seasoning, vegetable oil.
Directions: Use a hand tenderizer on the round steak and cut into serving pieces. Mix eggs with milk in a flat bowl. Mix flour, cracker crumbs and seasonings in another dish. Dip the pieces of meat in the egg mixture, then coat with the flour mixture - repeat. Set the pieces aside until they are all coated and then fry in hot oil until both sides are golden brown. Remove and place on a paper towel, covering with foil.
Gravy: Using 1/4 cup of the oil left in the pan and all the little pieces of breading that fell off, sprinkle with flour and whisk to make a roux. Add milk and whisk until blended. Cook until thick - add salt and pepper to taste. Serve with mashed potatoes and pour gravy over it all.
Ingredients: 4 pork chops, 8 oz sliced mushrooms, 1 onion sliced, 1 can cream of mushroom soup, 1/2 soup can water.
Directions: Brown pork chops. Remove from pan and cook the mushrooms and onions until golden brown. Put pork chops back in pan and cover with onions and mushrooms. Mix the soup with the water and pour into pan. Put a lid on the pan and cook on low for about an hour.

Pie iron recipes are so much fun to use. It is just amazing how good they turn out. Pie irons are individually sized and are used over coals or small flames. You can make something for breakfast, lunch or dinner with them.
Butter 2 pieces of bread. Put the buttered side down on one side of the pie iron. Put 2 or 3 tablespoons of apple pie filling on top of the bread. Put the other piece of bread on the filling with the buttered side up. Close the pie iron and cook over coals for 5 to 10 minutes turning often.
HAM AND CHEESE PIE
Butter 2 pieces of bread. Put the buttered side down on one side of the pie iron. Lay down a slice of cheese on the bread, then a piece of ham. Cover with another slice of cheese. Put the other piece of bread on with the buttered side up. Close the pie iron and cook for 5 to 10 minutes turning often.

NO BAKE CHERRY CHEESECAKE
Graham cracker crust: 1 ¼ cups graham cracker crumbs, ¼ cup soft butter or margarine, ¼ cup sugar.
Filling: 8 ounces of cream temperature at room temperature, 1 cup powdered sugar, 8 ounces cool whip, 1 teaspoon vanilla, 1 can cherry pie filling.
Directions: Mix cracker crumbs, butter and sugar until crumbly. Press into a pie pan, going up the sides. Whisk cream cheese, sugar and vanilla until smooth. Fold in cool whip. Pour into graham cracker crust and cool until firm. Spread cherry pie filling over the top.
NO BAKE CHOCOLATE COOKIE RECIPE
Boil together for 2 minutes: 2 cups sugar, ¼ cup cocoa, ½ cup butter, 1 tablespoon vanilla, ½ cup milk, 1/8 teaspoon salt. Pour over 3 cups of uncooked quick oats. Mix well and drop by teaspoon onto waxed paper.

That first cup of coffee on a cool morning really hit’s the spot while you are getting breakfast together. If you take an early morning stroll around the campground, you can smell breakfast cooking everywhere - yumm! Here are some easy camping recipes for breakfast!
BISCUITS AND GRAVY
Biscuits: Add ½ teaspoon baking soda to 2 ¼ cups bisquick. Cut in 1/3 cup butter, then add 2/3 cup of milk. Stir just until moistened. Turn out onto a floured surface and knead 10 times. Roll out ¾ inch thick and cut - don’t twist cutter or the biscuits will be flat. Place biscuits in a greased dutch oven, leaving ½ inch between them. Bake with 12 coals underneath and 18 on top for 15 minutes. Turn the dutch oven and the lid in opposite directions every 5 minutes for even browning.
Gravy: Brown 1 pound of sausage, breaking it up into small pieces. Do not drain. Add 3 tablespoons shortening, ¼ cup of flour, and slowly add 3 cups of milk while stirring with a whisk. Bring to a boil, turn down the heat and cook for 1 minute. Cut biscuits in half and pour gravy over them.
Whisk together 8 eggs and ½ cup milk. Saute 1 cut up onion in 1 tablespoon olive oil. Add eggs and 1 cup of chopped ham. Season with salt and pepper. Gently stir the eggs while they cook. Don’t overcook! Mushrooms can be added if you want - saute with the onion.
