KFC Chicken Recipe; For many, many years the recipe has been kept a secret - but now the secret is out!
Now you can make chicken that tastes just like the Colonel's!
Everybody loves Kentucky Fried Chicken! And for good reason - it is simply delicious.
Whether you make it when you are camping or if you make it at home - everybody will be delighted when they taste it!
What you need:
For the brine:
6 tablespoons of salt - 5 cups of water
Cut up the chicken and marinate the pieces for at least 2 hours - 12 hours is best - cover pieces completely and refrigerate.
Take the chicken pieces out of the brine - drain and pat dry with a paper towel.
For the chicken:
1 whole chicken or a cut up chicken - 1 egg - 1 cup of buttermilk - 1 cup of flour - 1 tbsp. salt - 1 tsp. pepper - 2 tbsp. Accent (MSG) - 2 tbsp. paprika - 1 tsp. garlic powder - 1 tsp. oregano - 1 tsp. chili powder - 1 tsp. sage - 1 tsp. basil - 1 tsp. marjoram - 1 tbsp. onion salt - ½ tsp. ginger - ½ tsp. baking powder - ½ tsp. baking soda - 2 tbsp. cornstarch.
How to make it:
1. Heat 6 cups of Crisco in a pressure fryer pan to 365 degrees.
2. While shortening is heating, prepare the coatings:
3. Whisk together 1 egg and 1 cup of buttermilk - set aside.
4. Whisk together in a different bowl the flour and all spices.
5. Coat chicken pieces in flour mixture.
6. Dip in egg mixture.
7. Coat again with flour mixture.
8. Drop in 4 pieces at a time in the hot oil, using a slotted fry spoon.
9. Lock the lid.
10. When steam starts coming out, set timer for 10 minutes.
11. Release pressure according to manufacturer’s instructions and remove the lid.
12. Remove the chicken pieces and place them on paper towels to absorb any grease.
13. Repeat for remaining pieces.
I prefer to use a chicken pressure fryer, because the chicken turns out so good - brown and crispy on the outside, tender and juicy inside.
But if you do not have a pressure fryer, you can use a deep fat fryer - heat Crisco or peanut oil to 365 degrees - fry 4 pieces at a time for 12 to 15 minutes - drain on paper towels.
